Steak Fajitas Recipe

Ingredients

For the Marinade:

  • 1/4 cup olive oil
  • 1/4 cup lime juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional, for heat)

For the Fajitas:

  • 1.5 pounds flank steak (or skirt steak)
  • 1 bell pepper, sliced (red, green, or yellow)
  • 1 large onion, sliced (yellow or red)
  • Salt and pepper, to taste
  • Tortillas (flour or corn)

For Toppings (Optional):

  • Sliced avocado or guacamole
  • Sour cream
  • Salsa
  • Shredded cheese
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

Step 1: Prepare the Marinade
  1. Mix Ingredients:
    • In a bowl, whisk together the olive oil, lime juice, minced garlic, cumin, chili powder, smoked paprika, salt, black pepper, and cayenne pepper (if using).
  2. Marinate the Steak:
    • Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, making sure it’s evenly coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Step 2: Cook the Vegetables
  1. Sauté the Vegetables:
    • In a large skillet, heat a tablespoon of olive oil over medium-high heat. Add the sliced bell pepper and onion. Season with salt and pepper. Sauté for about 5-7 minutes, or until the vegetables are tender and slightly caramelized. Remove from the skillet and set aside.

Step 3: Cook the Steak
  1. Preheat Grill or Skillet:
    • If using a grill, preheat it to medium-high heat. If using a skillet, keep it on medium-high heat.
  2. Cook the Steak:
    • Remove the steak from the marinade and discard the marinade. Grill or sear the steak for about 4-5 minutes per side for medium-rare, or longer if you prefer it more done. Use a meat thermometer to check for doneness (135°F for medium-rare, 145°F for medium).
  3. Rest the Steak:
    • Once cooked, remove the steak from the heat and let it rest for about 5 minutes. This allows the juices to redistribute.

Step 4: Slice and Assemble
  1. Slice the Steak:
    • After resting, slice the steak against the grain into thin strips.
  2. Combine:
    • In the same skillet, you can combine the sliced steak with the sautéed vegetables for a minute to heat everything through.
  3. Warm the Tortillas:
    • Warm the tortillas in a dry skillet or microwave.

Step 5: Serve
  1. Assemble Fajitas:
    • Serve the steak and vegetable mixture on warm tortillas. Top with your choice of avocado, sour cream, salsa, cheese, cilantro, and lime juice.

Tips:

  • Marinade Variations: You can experiment with different spices and herbs in the marinade, such as oregano or fresh lime zest.
  • Serving: Serve with a side of rice or beans for a complete meal.
  • Storage: Leftover steak can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
