Step 1: Prepare the Wonton Filling
- Mix Filling:
- In a large bowl, combine the ground pork, chopped green onions, minced garlic, minced ginger, soy sauce, sesame oil, cornstarch, salt, and pepper. Mix well until combined.
Step 2: Assemble the Wontons
- Fill Wontons:
- Take a wonton wrapper and place a small spoonful (about 1 teaspoon) of the filling in the center.
- Fold Wontons:
- Wet the edges of the wrapper with water. Fold the wrapper in half diagonally to form a triangle, pressing out any air. Seal the edges firmly. You can also bring the two corners together to form a “bowl” shape if desired.
- Repeat:
- Continue filling and sealing the wontons until all the filling is used.
Step 3: Make the Soup
- Prepare Broth:
- In a large pot, combine the chicken or vegetable broth and water. Bring to a boil over medium-high heat.
- Add Wontons:
- Gently drop the wontons into the boiling broth. Cook for about 5-7 minutes or until the wontons float to the top and are cooked through.
- Add Greens:
- If using, add the bok choy or spinach to the pot during the last 2 minutes of cooking.
Step 4: Season and Serve
- Season:
- Stir in the soy sauce and sesame oil, adjusting to taste.
- Garnish:
- Ladle the soup into bowls, garnishing with sliced green onions and fresh cilantro, if desired.
