Irish Beef Stew Recipe

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons vegetable oil (or olive oil)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth (low-sodium)
  • 1 cup Guinness beer (or another stout)
  • 4 large carrots, sliced
  • 3 large potatoes, peeled and diced
  • 2 cups celery, chopped

  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions

Step 1: Brown the Beef
  1. Heat Oil:
    • In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Brown the Meat:
    • Season the beef cubes with salt and pepper. Add them to the pot in batches (do not overcrowd) and brown on all sides, about 5-7 minutes. Remove the browned beef and set aside.

Step 2: Sauté the Vegetables
  1. Sauté Onions and Garlic:
    • In the same pot, add the chopped onion and sauté for about 5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.

Step 3: Build the Stew
  1. Combine Ingredients:
    • Return the browned beef to the pot. Add the beef broth, Guinness beer, tomato paste, Worcestershire sauce, thyme, rosemary, bay leaves, and any remaining salt and pepper.
  2. Add Vegetables:
    • Stir in the carrots, potatoes, and celery.

Step 4: Simmer the Stew
  1. Bring to a Boil:
    • Bring the mixture to a boil, then reduce the heat to low.
  2. Cover and Simmer:
    • Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors meld together. Stir occasionally.

Step 5: Serve
  1. Garnish:
    • Once the stew is ready, remove the bay leaves. Ladle the stew into bowls and garnish with fresh chopped parsley if desired.
