Ingredients
For the Meatloaf:
- 1 1/2 pounds ground beef (or a mix of beef, pork, and veal)
- 1 cup breadcrumbs (plain or seasoned)
- 1/2 cup onion, finely chopped
- 1/2 cup bell pepper, finely chopped (optional)
- 2 cloves garlic, minced
- 1/2 cup milk
- 2 large eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme (optional)
- 1 teaspoon dried oregano (optional)
For the Glaze:
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Dijon mustard (or yellow mustard)
- 1 tablespoon apple cider vinegar (optional)
Instructions
Step 1: Preheat the Oven
- Preheat:
- Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper for easy removal.
Step 2: Prepare the Meatloaf Mixture
- Mix Ingredients:
- In a large mixing bowl, combine the ground beef, breadcrumbs, chopped onion, chopped bell pepper, minced garlic, milk, eggs, Worcestershire sauce, salt, pepper, thyme, and oregano.
- Combine:
- Mix everything together gently with your hands or a spatula until just combined. Be careful not to overmix, as this can make the meatloaf tough.
Step 3: Shape the Meatloaf
- Form the Loaf:
- Transfer the meat mixture to the prepared loaf pan and shape it into a loaf. Alternatively, you can shape it freehand on a baking sheet lined with parchment paper.
Step 4: Make the Glaze
- Combine Glaze Ingredients:
- In a small bowl, mix together the ketchup, brown sugar, mustard, and apple cider vinegar until smooth.
Step 5: Bake the Meatloaf
- Add Glaze:
- Pour or spread half of the glaze over the top of the meatloaf, reserving the rest for later.
- Bake:
- Bake in the preheated oven for about 1 hour, or until the internal temperature reaches 160°F (70°C) and the meatloaf is cooked through.
Step 6: Final Glaze and Serve
- Add Remaining Glaze:
- In the last 10 minutes of baking, remove the meatloaf from the oven and spread the remaining glaze on top. Return to the oven to finish baking.
- Cool and Slice:
- Once done, remove the meatloaf from the oven and let it rest for about 10 minutes before slicing.
Serving Suggestions
- Serve the meatloaf with mashed potatoes, green beans, or a side salad for a complete meal. It also makes great leftovers for sandwiches!
Tips:
- Variations: Feel free to add other ingredients like grated carrots, celery, or even cooked bacon for extra flavor.
- Storage: Leftover meatloaf can be stored in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 3 months. Just wrap it tightly in plastic wrap and foil.
